Fish Cakes

I came up with this recipe to convince my toddler to eat salmon. It worked! And we found ourselves stealing bites of it too.

Ingredients

  • 1 cup fish (cooked and shredded) (may bake at 350°f for 20 minutes for best flavor. season with garlic powder and lemon juice if desired)
  • 1 tbsp tartar sauce
  • 1 tbsp mayonaise
  • ¼ cup onion - diced
  • 2/3 cup celery - diced
  • 1 tbsp flour
  • 1 tsp lime or lemon juice
  • ½ tsp salt
  • ½ to 1 tsp cayenne pepper
  • ½ tsp tabasco pepper
  • ½ tsp pepper
  • 1 to 2 cups breadcrumbs

Directions

  1. Mix all ingredients except breadcrumbs.
  2. Make patties out of mixture.
  3. Coat with breadcrumbs.
  4. May bake at 400°F for 7-10 minutes per side, or pan fry in a little oil until browned.
  5. May serve plain or with tartar sauce.
