Scalloped Potato Bake - Quick Meal

Works well as a side though it does take some planning ahead.

Ingredients

  • 3-4 medium sized yellow potatoes - cut into thin slices
  • 1 cup shredded cheese
  • 1 can cream of mushroom soup
  • salt/pepper
  • dried parsley for garnishing

Directions

  1. Place sliced potatoes into greased baking pan.
  2. Add salt and pepper.
  3. Spread cream of mushroom soup over top.
  4. Sprinkle parsley over top.
  5. Spread shredded cheese over top.
  6. Bake covered for 1 hour at 375F.
  7. Remove cover and bake for 30 more minutes.
