Spicy Meatloaf
A very moist, slightly spicy meatloaf recipe topped with a slightly sweet glaze - perfect for a Sunday night dinner.
Ingredients
Meatloaf
- ½ lb ground pork, thawed
- ½ lb ground beef, thawed
- ½ medium onion
- 3 cloves garlic, chopped
- 1 rib celery
- 1 tomato
- 1 jalapeno peppers, adjust according to taste
- 1 egg
- ½ cup oatmeal
- ½ tsp salt
- 1 tsp pepper
- 1 tsp paprika
- 1 tsp oregano
- 1 tsp parsley
- ½ tsp cumin powder
- ½ tsp ginger powder
- 1 tbsp worcheshire sauce
- 2 tbsp ketchup
Topping
- ½ cup ketchup
- 1 tbsp mustard
- 2 tsp brown sugar
- 2 stalks green onion - chopped finely
Directions
- Grind onion, garlic, celery, tomato, jalapenos in food processor or mini chopper. (May manually chop fine these if no chopper or food processor.)
- Add all spices, worcheshire and ketchup and mix.
- Add ground meat.
- Add oatmeal and egg and mix well.
- Mix all ingredients for topping and spread over meat mix.
- Place in rectangular pan and bake in preheated oven at 350F for 40-45 minutes.
