Fish Cakes
I came up with this recipe to convince my toddler to eat salmon. It worked! And we found ourselves stealing bites of it too.
Ingredients
- 1 cup fish (cooked and shredded) (may bake at 350°f for 20 minutes for best flavor. season with garlic powder and lemon juice if desired)
- 1 tbsp tartar sauce
- 1 tbsp mayonaise
- ¼ cup onion - diced
- 2/3 cup celery - diced
- 1 tbsp flour
- 1 tsp lime or lemon juice
- ½ tsp salt
- ½ to 1 tsp cayenne pepper
- ½ tsp tabasco pepper
- ½ tsp pepper
- 1 to 2 cups breadcrumbs
Directions
- Mix all ingredients except breadcrumbs.
- Make patties out of mixture.
- Coat with breadcrumbs.
- May bake at 400°F for 7-10 minutes per side, or pan fry in a little oil until browned.
- May serve plain or with tartar sauce.
