Cherry Crisp
This is my favorite substitute for Cherry Pie due to its reduced preparation time. Crunchy and tasty, perfect with vanilla ice-cream. I have recently updated this recipe to reduce the amount of sugar used.
Ingredients
Filling
- 4 to 5 cups pitted fresh or frozen cherries
- 1/4 cup unbleached all-purpose flour
- 1/3 cup sugar
- 1 tsp cinnamon powder
Topping
- 1 ¼ cups oatmeal
- 1/2 cup brown sugar
- 1 ¼ cups unbleached all-purpose flour
- ¾ cup butter, diced
- 1 tsp cinnamon powder
Directions
- Preheat oven to 375F.
- Mix pitted cherries with 1/3 cup sugar and 1/4 cup flour. Pour into 9x13 pan.
- In a separate bowl, mix together oatmeal, 1 & 1/4 cup flour, cinnamon powder and brown sugar. Once well mixed, mix in diced butter.
- Spread topping mix evenly over cherry filling.
- Bake in 375F oven for 45-55 minutes, until topping is golden brown.
- Serve warm with vanilla ice-cream.
