Vietnamese Style Fresh Spring Rolls With Korean Jap Chae
This recipe combines Korean Style Jap Chae and Spicy Cucumber Salad in a Vietnamese style Fresh Spring Roll. It's a quick meal idea if using leftovers of Jap Chae and Spicy Cucumber Salad. It makes a wonderful light meal or snack. It can be prepared ahead of time for picnic.
Ingredients
Korean Style Jap Chae
- 5 tbsp Low Sodium soy sauce
- 2 tbsp brown sugar
- 2 tbsp sesame seed oil
- ¾ lb dry sweet potato noodles (rehydrated according to package, rinsed with cold water and drained)
- 3 cloves garlic, chopped
- ¼ medium onion, chopped
- 1 hot chilli pepper (sliced thinly, optional)
- 2 tbsp cooking oil
- 1 carrot, sliced thinly
- 1 leek, sliced thinly or 2 cups spinach
- 6 dried shiitake mushrooms, rehydrated and thinly sliced
- 1 sweet red pepper (thinly sliced, optional)
- ½ cup shrimps (peeled, deveined and rinsed with salt)
Korean Style Spicy Cucumber Salad
- 2 cups cucumber (deseeded, cut thinly lengthwise into 3 inch portions)
- 1 to 3 tsp Korean hot pepper powder, adjust according to taste
- 1 tsp Gochujang, or Korean chili paste
- 1 tbsp vinegar
- 2 tsp sugar
- ¼ tsp salt
- 1 tbsp sesame seed oil
- ¼ tsp garlic powder
Spring Roll Assembly
- 1 package Vietnamese rice paper wrap (can be obtained at most Asian grocery stores)
- fresh basil leaves (2 leaves per spring roll)
Directions
Korean Style Jap Chae
- Fry in cooking oil chopped onion, garlic and hot chilli pepper, if using hot peppers.
- Add shrimp and fry until tender but cooked. Remove from pan (to avoid overcooking) and set aside.
- Add thinly sliced carrot, mushrooms and leeks.
- Mix together sesame seed oil, brown sugar and soy sauce and set aside.
- Add cooked sweet potato noodles. If noodles start to burn, it might be necessary to lower heat.
- Add soy sauce mixture over noodles and stir. If noodles are not sufficiently tender, may need to add some water 1/4 cup at a time.
- Once noodles are sufficiently tender and mixed, add sliced red peppers. Remove from heat.
Korean Style Spicy Cucumber Salad
- Mix together all ingredients for Spicy Cucumber salad and set aside for about 1 hour before use in Fresh Spring Rolls.
Spring Roll Assembly
- Soak a rice paper sheet in about 1/2 inch paper until tender, usually just a couple of minutes. Soak sheets one at a time just prior to use in spring roll assembly.
- Grease lightly the surface to be used for rolling the spring rolls, to prevent rice paper from sticking, when assembling the rolls.
- Place a couple of forkfuls of Jap Chae, with some shrimp near the middle of the soft rice sheet. Place a couple of spicy cucumber slices on top of the noodles. If basil is available place 2 basil leaves on top of cucumber.
- Roll rice paper as tightly as possible. May serve with sauce leftover from Korean Spicy Cucumber salad.
